Jim the Greek presents us with another one of his bevy of recipes with a twist.
A Colombian kid showed me this a while back and said this was his absolute favourite snack.
Halve an avocado and remove the pit
Roughly chop four anchovy fillets
I like my avocados with a bit of feta and tomatoes as I’m not a big fan of anchovies it just cuts the fishiness away
Add ingredients into the avocado centre and drizzle with a touch of olive oil and salt
Nutrition at 6g protein, 28g fat, 1g carbs –1175kj
REMEMBER THESE ARE GOOD FATS PEOPLE! Over 14 different vitamins and minerals as well as other health promoting antioxidants such as lutein and zeaxanthin – important for eye health. One avocado provides around 12g dietary fibre which is nearly half the recommended daily fibre intake. Avocados also contain plant sterols which help to lower cholesterol re-absorption so get on it!
